1 Minute Chocolate Chip Cookie

There’s nothing like a warm, homemade, chocolate chip cookie. But what do you do if you don’t want to make a whole batch of cookies and you want one…now! I love, love, love, this recipe because I almost always have all of the ingredients on hand, and it only takes a minute in the microwave to make! Can you believe it? I’ve made one of these for an afternoon snack, and even as little desserts for people when they come over with a scoop of ice cream on top!

So many friends have asked for the recipe…so here it is!

What you need: 1 tablespoon of butter, 1 egg yolk, 1 tbs white sugar, 1 tbs brown sugar, a splash of vanilla, a pinch of salt, 1/2 cup of flour, chocolate chips and a ceramic mug or ramekin.

Start with a microwaveable mug or ramekin.

Add a tablespoon of butter.

Melt the butter in the microwave for 15 seconds.

Add 1 egg yolk.

Add 1 tablespoon of granulated white sugar.

Add 1 tablespoon of light brown sugar.

Whisk together with a fork. Add in a splash of Vanilla.

Add in 1/4 cup of flour and a pinch of salt.

Mix together with a fork.

Add in a small handful of chocolate chips.

Mix in and microwave for 1 minute.

And there you have it! A perfectly wonderful single-serving of chocolate chip cookie!

    I have made these for my husband and myself several times. It’s just enough to satisfy the craving for sweets without leaving a temptation around to trip you up. Great idea!
